Well, thanks again to the wonderful ladies at E-mealz have done it AGAIN! This recipe was SUPER yummy! Seriously, my little guy was shoveling it in by the handfuls!! If you haven't checked out their website yet, I STRONGLY recommend it!!!
King Ranch Casserole
2-3 split chicken breasts cooked and chopped
10oz pkg frozen seasoning blend*
10 3/4oz can cream of chicken soup
10 3/4 can cream of mushroom soup
10oz diced tomatoes and green chiles- 2/3 of can
1 teaspoon chili powder
1/2 teaspoon garlic salt
10 corn tortillas, 6 inch
8oz shredded cheddar, divided
(To cook chicken breasts, cover chicken with water, in a sauce pan. Bring the water to a boil; cook 20 minutes. Drain; cool. Pull meat off and chop)
*The frozen seasoning packet is NOT what I was expecting. It actually looks like a bag of frozen vegetables. I was looking for like a taco powder packet this is a bag of frozen onions/peppers/etc to use as 'seasonings'... thought that might help you out!

1. Stir together the first 7 ingredients, through garlic salt.
2. Tear tortillas into 1 inch pieces.
3. Layer 1/3 of the tortilla pieces into the bottom of a lightly greased 9"x13" baking dish.
4. Top with 1/3 of the chicken mixture and 2/3cup of cheese.
5. Repeat layers twice.
6. Bake at 350 for 30 mins. or until casserole is thoroughly heated and bubbly.
